“Kugelis” čenakinėse
2008-06-24Čenakines, žinoma, pirkau čenakams gaminti. Bet jose puikiai iškepa ir kiti dalykai, kurių anksčiau net nebūčiau sugalvojusi kišti į tokius molinukus. Pavyzdžiui, bulvių plokštainis, dar vadinamas tarkiu, o pas mus tiesiog “kugeliu” (arba “kūgeliu”). Paprasta pagaminti, nereikia bijoti, kad pridegs ir labai skanu.
Reikės:
Bulvių – geriausia šviežių. Kiek jų reikia, negaliu pasakyti, nes tarkuojam visada “iš akies”. Nuo to tiesiog priklauso, iki kokio lygio bus pripildytos čenakinės.
Poros nedidelių svogūnų
Kiaušinio
Druskos, pipirų
Grietinės
Rūkytos šoninės
Sutarkuokite bulves. Geriausia imti smulkią tarką. Ne tokią, kuri viską paverčia koše ir ne tą tradicinę “burokinę”. Tada plokštainis bus purus. Į bulvių masę įberkite druskos ir pipirų, įmuškite kiaušinį. Geriausia viską berti, maišyti ir ragauti iškart, nes yra didelė rizika padauginti prieskonių arba jų pagailėti. Tada smulkiai supjaustykite svogūną ir išmaišykite jį plokštainio masėje. Košę lygiomis dalimis išpilstykite į čenakines. Paprasčiausia tai atlikti su samčiu. Pripilti iki kraštų nereikėtų, nes “kugelis” kepdamas išsipučia ir gali pradėti “lipti” lauk. Uždenkite dangtelius ir kepkite apie 40 minučių vidutinės temperatūros orkaitėje. Arba pusvalandį, arba valandą. Kepimo laikas iš tikro priklauso nuo čenakinių dydžio ir bulvių rūšies. Aš tiesiog išimu vieną “kugelį” ir pabadau jį šakute. Jei neskystas, vadinasi, iškepęs. Jei norite plokštainio su plutele – likus pusei kepimo laiko nuimkite čenakinės dangtelį.
Kol iškepęs plokštainis praauš, galima pagaminti padažiuką iš lašinukų, svogūnų ir grietinės. Tam smulkiai supjaustykite svogūną, pakepinkite jį kptuvėje ir suberkite smulkiai pjaustytą šoninę. Kepkite tol, kol šoninės gabaliukai pavirs spirgučiais – išsilydys ir apskrus. Tada įdėkite kelis šaukštus grietinės ir gerai išmaišykite. Padažo užpilkite ant plokštainių. Skanaus!

2008-06-24 17:59ooo, mmm (: priminė senai nebeegzistuojančioj Ritos smuklėj (Vilnius, Žirmūnai, dabar ten Laimos smuklė) valgytą kugelį keptą panašiame tik didesniame moliniame puoduke, kur ant dugno dar buvo kiaulės uodega.

2008-06-24 22:17Mūsų boulinge prie ofiso bulvių plokštainis irgi kepamas panašiuose induose. Jis paįvairinamas vištiena arba, jei gerai pamenu, kiaulės ausimis.
Pati kepdama kūgelį, paprastai sutarkuoju ne tik bulves, bet ir svogūną. Ir skardą pakloju šoninės griežinėliais. Mhm, kepu skardoje. Bet gi vis galvoju (ir taip galvoju jau gal metus) kokius tai panašius indelius įsigyti – man iš atminties neina mamos ruošiami čenakai ;)
